El Califa de León is an unassuming yet iconic taco stand in Mexico City, occupying a mere 3x3 meter space with room for only six standing patrons. Renowned for its signature Gaonera taco, named after bullfighter Rodolfo Gaona, El Califa de León has been serving this specialty since its opening in 1968. The Gaonera features tender beef fillet, simply seasoned with salt and lime, wrapped in a freshly made tortilla, and accompanied by green or red salsa. Michelin praised the taco for its exceptional quality and elemental purity.
